Re 'Is Devon the True Home of the Pasty'? (HE, July 12) I really must, as a lifelong pasty maker, correct the recipes given both for the pastry and the filling.

Lard in the pastry, by all means. But butter? And egg? Never on your life. Pasties were for poor miners, farm workers et al.
